Italian Sausage and kale Soup

Ingredients
1 lb. of ground turkey sausage3 - 4 large russet potatoes, halved lengthwise and sliced thinA bunch of regular kale or baby kale (rinsed)1 onion, chopped3 cups chicken stock (or broth)5 cups of whole milk1 Tbsp oregano½ tsp Red pepper flakes1 tsp black pepper
Directions
Boil sliced potatoes for about 10 minutes. Drain, rinse and set aside.
Brown sausage with onion.
When sausage is cooked, add stock (or broth), milk, oregano, red pepper flakes, salt and pepper. Slowly bring to a boil. Note: if using turkey sausage, there is no need to drain the meat. But if using pork sausage, drain the meat before adding liquid ingredients.
Slowly bring to a boil.
Add potatoes and kale.
Simmer for 10-15 minutes.
