Lentils, 1 cup any colorExtra Virgin Olive Oil, 1 tbspGarlic, 2 cloves, mashedGinger Root, 1 tsp mashedCurry powder, 1 tspGarlic powder, 1 tspCardamom, ground, .25 tspPaprika, .5 tspMustard seed, yellow, 1 tsp groundCinnamon, ground, .5 tspWater, 2.25 cups
Heat oil and sautee garlic and ginger until soft (usually 2-3 minutes). Add spices, stir. Add lentils and water and cook per method instructions. (In the pressure cooker, use the "Cook" mode and watch for doneness!) Makes approximately two cups. Goes great with jasmine or basmati rice.
Variations: Substitute rice for half of the lentils. Add canned beans or frozen/canned peas/other vegetables (thawed) for the last few minutes of cooking.
