Ingredients
spanish onion, choppedsweet potato, peeled and choppedzucchini, choppedbroth is homemade and can include bits of the veggies like celery or onion
Directions
olive oil is optional and you can put everything in a pot and boil it, but it will add flavour when the onion is softened in the oil and then all the ingredients.Boil for an hour and then blend. Serve with grated parmeggiano and a sprinkling of parsley.
