3 medium baby zucchini, grated and squeezed dry4c rice Chex cereal, processed to make approx 1 1/4c crumbs1/2c parmesan cheese3 eggs2 cloves garlic, minced1/8 t nutmeg1 t paprika1/4 t salt1/4 t pepper3 T olive oil
Grate zucchini and squeeze out excess water; use food processor to grind rice Chex into crumbs; mix all ingredients except the olive oil until moist and the zucchini is evenly coated. Take approx 2-3 Tbsp of mixture and form approx 12 patties.
Heat olive oil in pan. Once heated, add patties and cook until golden brown. approx 5 minutes per side.
