Muffin Omelette

Ingredients
8 eggs3 cups finely chopped veggies (anything works - great to use up scraps! I chose broccoli, spinach, bell pepper, onion, and part of a can of tomatoes)2 tbsp chia or flaxseed (optional for added fiber)1 clove garlic, minced1/2 tsp salt
Directions
Preheat oven to 350.
Place eggs in a bowl, beat well.
Add all other ingredients and combine.
Grease muffin tins or line with muffin paper.
Pour about 1/2 c. of egg mix into each muffin cup.
Bake 18 to 20 minutes.
