Ingredients
1 Tbsp Extra Virgin Olive Oil3 boneless, skinless chicken breast cut into 1/4 inch chunks1/4 cup fresh onion, chopped16 Corn Tortillas2 Tbsp Herdez salsa verde (green salsa) - 1/4 cup Fiesta Blend shredded Cheese1 cup Iceberg Lettuce shredded or chopped3 Tbsp Cilantro, raw, chopped8 wedges lime1/4 tsp Himalayan Pink Sea Salt
Directions
makes 16 tacos

Put EVOO into a pan over med-high heat, add onions and chicken. Add your favorite spices at this time. Cook until meat is cooked through and starts to brown, meanwhile chop up your cilantro, lettuce, and limes. Turn your chicken down to low, and cover just to keep it warm. On a hot griddle warm your tortillas, just until they're nice and soft and don't crack when you bend them.

Move all of your fixins to the table and let everyone create their tacos at the table!
