Shrimp Ceviche

1/2 pound raw shrimp, peeled, deveined and chopped1 cucumber, peeled, seeded, and chopped1 red onion, chopped (approx 1/2 cup)3 roma tomatoes, seeded & chopped1 clove of fresh garlic, chopped or pressedapprox 1/4-1/2 cup of lime juiceAbout 2 tsp Tapatio hot sauce, or to tasteSaltRed Pepper flakes to taste
1. Peel & devein shrimp if necessary. Chop into small pieces and place in glass or plastic mixing bowl. Pour lime juice over shrimp to coat well, mix, and let sit in fridge for 15-30 minutes until most of the shrimp turn pink and opaque.
2. Stir in remaining ingredients and let stand in fridge to develop flavors.
