Gazpacho (no bread)

Ingredients
6 tomatoes1 bell pepper1/2 seedless cucumber1/2 small onion1 serrano pepper2 Tbsp olive oil1 Tbsp palm oil1 Tbsp lime juice1 Tbsp fire cider1 tsp minced garlic1/4 tsp fine salt
Directions
Wash vegetables and cut into chunks. Place in a blender with remaining ingredients and process until almost smooth. (I usually need to work two batches in my blender.) Pour into a nonreactive bowl and taste for seasoning. Cover and let stand in refrigerator for at least an hour for flavours to mellow.

Serving Size: makes about 2 quarts (or 8 1-cup servings)
