Vegetable and Sweet Sausage Bolognese

Ingredients
3.25 cup Red Gold Crushed Tomatoes 1/4c serving (28oz can) 1 serving Johnsonville Sweet Italian Sausage (1 link) 1 cup, cubes Eggplant, fresh 1 cup, sliced Zucchini 0.33 cup, chopped Onions, raw .33 cup, chopped Carrots, raw .5 cup, chopped Peppers, sweet, red, fresh 0.33 cup, diced Celery, raw 4 clove Garlic 0.06 cup Tomato Paste
Directions
Cube the zucchini and eggplant. Chop the other vegetables. Keep the carrot very small so to allow it to cook thru. Crumble and saute sausage and the carrots. When sausage is done add peppers onions celery. Saute until translucent. Then add the garlic squash and eggplant. Saute a couple more minutes add the tomato paste stir around coating vegetables then add crushed tomatoes. Allow to simmer about 15 minutes til thickened. Season with 1/4 tsp red pepper flakes or more to taste with salt and pepper.
