Ground Beef, Spinach and Egg Casserole

8 oz Ground beef, lean 2 Tbsp Coconut Oil 1 package (8 oz) fresh Mushrooms, sliced1 package (6 oz) Spinach, fresh 12 large Egg, fresh, whole, raw 0.25 tsp Garlic salt 0.5 tsp Pepper, black Coconut Cooking Spray
Preheat oven to 400°F. Heat oil in a large
skillet over medium heat. Add ground beef and
mushrooms; cook 5 minutes or until browned,
stirring frequently. Add spinach; cook 2 minutes
or until wilted. Remove beef mixture from pan.
Whisk together eggs, garlic salt and pepper in a
large bowl. Stir in beef mixture. Pour into a 9-x
9-inch baking dish coated with cooking spray.
Bake 20 to 25 minutes or until center is set. Cut
into squares to serve.
