Ingredients
0.25 cup spelt flour0.25 cup barley flour0.5 cup rye flour1 cup soy flour1 tsp cinnamon1 tsp baking soda1 tsp baking powder2 tbsp apple cider vinegar0.5 cup silken tofu0.5 cup pitted prunes1 cup cooked sliced carrot1.5 cups grated zucchini1 cup raspberries
Directions
1. Mix dry ingredients
2. Whiz wet ingredients (tofu, prunes, vinegar and carrot) in blender until combined
3. Mix into dry ingredients, and add in zucchini and raspberries. Bake for about 20 minutes at 375 degrees Fahrenheit/195 degrees Celsius. Makes 12 very dense muffins.
