1 cup Lentils 2 cups Basmati Rice5 tbsp Olive Oil 3 tsp Cumin seed0.5 tap cracked black pepper3 medium (2-1/2" dia) Onions, raw, sliced thin1.5 tsp Salt 0.5 tsp ground cumin.5 tsp Pepper, red or cayenne 1 cinnamon stickFresh lemon juice
Cook up lentils and drain
Heat oil, cumin seeds (high heat)
Caramelized onions in oil (use a very large skillet)
Cook up rice
Separate onions--half are for garnish
Mix in ground cumin, cayenne, cinnamon stick, heat a minute
Mix in rice, cook until a little brown
Mix in lentils, 3 cups water, and salt
Bring to a boil
Simmer covered 30 min
Serving Size: 4 1.25 cup servings
