Ingredients
4 large red potatoes2 Tbsp. olive oil, extra light1 tsp. salt1/2 tsp. black pepper1 tsp. garlic powder
Directions
Preheat oven to 375 degrees.

Cut red potatoes into chunks and place in a large bowl. Add the remaining ingredients and stir to coat the potatoes well.

Transfer to a 9 x 13 pan and cover tightly with tin foil. Bake 30 minutes, or until potatoes are tender. Uncover and bake an additional 15 minutes, or until potatoes are browned.

Makes 6 servings.
