2 stalk, large (11"-12" long) Celery, raw 1 cup, chopped Onions, raw 3 cup Spinach, fresh 4 clove Garlic 4 serving Broth, chicken: College Inn, Light & Fat Free, 50% less Sodium, Chicken Broth, 1 cup/serv 6 ounces Chicken Breast (cooked), no skin, roasted 2 thigh, bone and skin removed Chicken Thigh 1 serving Dynasty Sliced Water Chestnut (1/2 cup drained = 1 serving) 3 serving Artichoke hearts, in water, Reese 3 tbsp Extra Virgin Olive Oil
Saute in olive oil celery, onions, garlic.
Add chopped chicken, chopped artichoke hearts, fresh spinach, water chestnuts. Cover for few minutes to steam spinach.
Add broth and seasonings to taste.
Simmer til heated thru
