Greek Lemon Chicken Soup

Ingredients
10 serving Pacific Natural Foods Organic Low Sodium Chicken Broth, 1 cup 3 tbsp Olive Oil 8 clove Garlic 1 medium (2-1/2" dia) Onions, raw 1 lemon yields Lemon Juice 8 ounces Chicken Breast (cooked), no skin, roasted 1 cup, dry, yields Couscous 6 oz Feta Cheese 1 package (10 oz) Spinach, fresh
Directions
Sautee onion and garlic in oil.
Add chicken stock, chicken breast, lemon zest, crushed red pepper. Cover, bring to boil.
Reduce to medium, simmer for 5 minutes.
Stir in couscous, s&p to taste.
Simmer 5 minutes, turn off heat.
Take out chicken, add spinach to wilt.
Shred chicken, add back to soup.
Serve with crumbled feta.
