Pinto Bean Loaf

2 cups of pinto beans 1 cup of brown rice1/2 cup of walnuts, finely chopped2 tablespoons of olive oil1 tablespoon of flax seed meal1 clove of garlic, minced1 onion, minced 1 large carrot, minced2 stalks of celery, minced1/4 cup tomato juice1/4 teaspoon of thyme1/2 teaspoon of sagesalt and pepper to taste.
Saute the veggies in the oil. When they are tender mix them with all the other ingredients in a mixing bowl. Use a potato masher to mix it all together. The consitancy should be that of a regular meat loaf. Pour mixture into a loaf pan and bake at 350 for about an hour. Let the loaf rest for approx. 15 minutes before serving. Slice this into eight pieces and serve with some veggies or a salad.
