2 tbsp Crisco Pure Vegetable Oil .25 medium (2-1/2" dia) Onions, raw (Diced)2.5 clove Garlic (Minced)16 oz Turkey, Ground turkey, 93% lean 3 medium (2-1/4" to 3-1/4" dia.) Potato, raw (Chopped)1.5 cup (8 fl oz) Chicken Broth .5 cup Rooster Brand Coconut Milk 8 oz Almond Breeze Almond Milk, Unsweetened Original, shelf stable 1 tsp Emeril's Italian Seasoning (by GGBARKER48) 1 bunch Spinach, fresh (Chopped)
Heat oil over medium high heat
Add onions and garlic and sweat them until translucent
Add Turkey, cook breaking apart chunks until browned
Add cook 15 minutes stirring occasionally
Add chicken broth, almond milk, coconut milk, and Italian seasoning. Simmer for 15 minutes or until potatoes are tender.
Remove from heat. Mix in spinach.
Serve HOT!
