Broccoli and Cheese Soup

3 cups Chopped Broccoli (frozen or fresh) 1/2 cup onion, finely chopped1/2 cup butter1/2 cup flour1/4 teaspoon salt1/8 teaspoon pepper2 cups milk 1 can chicken broth (10.75 oz.)1 cup Velveeta (cubed)1/2 teaspoon mustard
Cook and drain broccoli and onion and set aside. In a medium saucepan, heat butter, flour salt and pepper to create a rue. Add the milk and stir until thick. Stir in chicken broth, velveeta and mustard and stir until cheese has melted. Add the broccoli last. Makes about 8 1-cup servings.
