Greek Cracker Pizza

1 Roll up flat bread sandwich wrap or Tortilla2 tbsp Pizza sauce2 tsp Pesto1 tsp. Olive Oil3/4 c. Part Skim Mozzarella2 tbsp Shredded parmesan1/4 c. Feta1/2 c. Spinach1/4 c. Onion5 quarters canned artichokesSaltPepper
Heat oven to 400 degrees.
Slice onion and saute in hot olive oil over medium heat, stir occasionally.
While the onion cooks, spread on your wrap or tortilla the pizza sauce and pesto. Add cheeses and spinach. With artichokes, cut off all of the leafy ends and cube into quarter inch pieces. Spread over pizza. Onions should be turning brown by now, add that to the top of the pizza. Salt and pepper to taste.
Place on a cookie sheet in oven for 10-12 minutes.
I slice this into 8 small slices
