1 package Smart Ground original (soy crumbles)2 TBSP finely chopped ginger1 egg white or 1/4 c. EnerG egg replacer1/2 c. finely chopped onion3 garlic cloves, minced1/4 c. cilantro, chopped1 TBSP curry paste (can substitute powder)1 tsp turmeric1 TBSP finely chopped parsleyFor sauce:1 c. plain fat free yogurt (can be soy yogurt)1/2 c. peeled, chopped cucumbersalt and pepper to taste
Makes 4-6 servings. Can be vegan if you use egg replacer and soy yogurt. Mix together the Smart Ground, ginger, onion, egg white/egg replacer, garlic, cilantro, parsley, curry paste, turmeric (everything except the sauce ingredients). Measure out 1/4 c. portions and form into patties. Broil for 5 min. on each side, or cook on the grill. To make sauce, mix yogurt with cucumber, salt and pepper to taste. 1 serving is 2 patties with 1 TBSP of the sauce.
