Curried Bulgur with onions, Carrots and Raisins

2 Tab canola oil1 medium onion, chopped2 Tab curry powder1 cup bulgur2 large carrots, peeled and grated or finely chopped1 3/4 cups low sodium chicken broth, heated to the boiling point (any kind, not just Campbells)1/4 cup raisinsSalt & Pepper to taste
Place the oil in a medium skillet or saucepan that can later be covered and turn the heat to medium. Add the onion and cook, stirring, until its soft, about 5 min.
Add the curry powder and continue to cook for another minute. Add the bulgur and stir to coat with the oil. Add the carrots and stir once or twice.
Add the liquid, and raisins, cover, and cook over very low heat for 10 minutes. Turn off the heat and let sit for 15 minutes more. Season with salt and pepper and serve.
