Camille's Low Carb Broccoli Cauliflower Cheese Soup

1 stick Butter, salted 2 cup, shredded Cheddar Cheese 3.50 cup, fluid (yields 2 cups whipped) Heavy Whipping Cream 2 cup Cauliflower, raw 2 clove Garlic 0.50 large Onions, raw 4 cup Swanson Chicken Broth 99% Fat Free 1 tbsp Extra Virgin Olive Oil 425 gram(s) Organic Broccoli Florets, Purely Frozen, Costco
Saute onions and garlic in olive oil, until transparent. Add two cups chopped cauliflower, and Chicken broth. Allow to simmer. In a large stock pot, melt butter on low, whisk in flour (option for thickness). Whisk until bubbling. Slowly add heavy cream and cheese. Stir until all cheese is melted. Steam the broccoli. Smooth large chunks of cauliflower mixture with an immersion blender, or give it a couple pulses in a food processor. Add all vegetables to cream mixture. Salt and pepper to taste.
