Taco Cups

Ingredients
1 lb lean ground beef1 pkg low sodium taco seasoning1 (11oz) can corn2 cans biscuits3/4 cup shredded cheddar cheeseOptional: salsa, sour cream, lettuce, tomatoes, olives
Directions
1. In skillet, brown beef and drain well. Return to skillet. Add taco seaoning and prepare according to package directions. Add corn. Mix well.

2. Spray muffin tin with non-stick cooking spray. Place individual biscuits into muffin pan, pressing them around each muffin pocket (it helps if you press them out flat first). Fill each biscuit with meat mixture and top with cheese.

3. Bake at 400 degrees for 10-15 minutes.

Top with optional ingredients if desired.
