.5 cup Soba Noodles 1 serving 1 Med. Green Bell Pepper 1 Cup Edamame, frozen, prepared .5 cup, strips or slices Carrots, raw 1 cup, chopped Onions, raw .5 cup Rice Noodles 2 tbsp Peanut Butter, smooth style, with salt 1.33 tbsp Chili Paste Sambal Oelek - Rooster Brand (by OBEIRN) 1.33 tbsp Vinegar - Natural Rice Vinegar (Nakano) 1.33 tbsp Kikkoman Lite Soy Sauce 4.05 tbsp Extra Virgin Olive Oil 1 tbsp Black Roasted Sesame Seed (by PLHEARD)
Cook soba noodles according to pkg instructions. Rinse and drain. Meanwhile, make Spicy Peanut Dressing: In a small bowl, whisk together peanut butter, sambal oelek, rice vinegar and soy sauce. While whisking, slowly drizzle in oil until all oil is incorporated. Stir in sesame seeds.
Divider Spicy Peanut Dressing among 4 pint-size mason jars or similar container. Divide soba noodles over dressing. Layer remaining ingredients, ending with rice noodles. Refrigerate covered up to 5 days. To serve, pour onto plate or bowl, stir and enjoy
