Spinach-Cheese Bake

Ingredients
1 tbsp Butter, salted 1 package (10 oz) Spinach, fresh, roughly chopped 3/4 cup Colby and Monterey Jack Cheese, shredded 1 cup Sharp Cheddar Cheese, shredded 1 1/3 cup flour 1 1/2 cup Milk, nonfat (skim milk) 1 cup Egg substitute, liquid 1 tsp Salt 1 tsp Baking Powder 2 tsp Dijon Mustard (Great Value) 1/4 tsp Pepper, black 1/8 tsp Nutmeg, ground 1/8 tsp Pepper, red or cayenne
Directions
1. Preheat oven to 350 degrees.
2. Pour the butter into the bottom of a 13x9 inch baking dish coated with cooking spray, tilt dish to coat.
3. Place spinach evenly in bottom of dish, sprinkle evenly with cheeses.
4. Combine flour and remaining ingredients in a medium bowl and stir with whisk until blended.
5. Pour milk mixture over cheese.
6. Bake at 350 for 40 minutes or until lightly browned.
