Coconut Peanut Butter Chocolate Chip Muffins

1 C Coconut Flour 0.5 cup Whole Wheat Flour 2 tsp Baking Soda 1 tsp Cinnamon, ground .5 C Peanut Butter Powder8 Large Egg whites1 cup Natural Unsweetened Apple Sauce 1 C Nonfat Greek Yogurt 0.5 cup Granulated Sugar .25 tsp Stevia9 tbsp Real Semi-Sweet Chocolate Chips 1 tsp Vanilla Extract
Mix dry ingredients [ Coconut flour, WW flour, baking soda, cinnamon, peanut butter powder, sugar, stevia.]
Mix wet ingredients. [egg whites, apple sauce, yogurt, vanilla]
Add 8 T of the 9 T of Chocolate chips to dry ingredients, save 1 T for top of muffins.
Mix wet ingredients into dry ingredients.
Let sit 15 minutes so coconut flour absorbs moisture and is less gritty.
Divide evenly among 20 silicone muffin liners.
Top each muffin with 3 chocolate chips from reserved T.
Bake 22 minutes in pre heated 350 degree oven
