17 Bean & Spelt Blend

Ingredients
2 medium garlic scallions2 tsp Extra Virgin Olive Oil1/2 cup TJ's 17 Bean Blend1/2 cup TJ's Spelt3/4 cup 99% Fat Free Broth3/4 cup waterSalt to Taste
Directions
Soak the beans overnight in plenty of water. Chop the scallions into 1/4 inch pieces. Saute the scallions in the olive oil over medium heat for 2-3 minutes. Add in the spelt and continue to saute for another minute. Add in 1/2 cup of broth and the beans. Cook on medium-low heat until most of the water is absorbed. Add in 1/2 cup water and do the same thing. Finally, add in the remaining water and broth. Cook until its absorbed. Makes 4 servings.
