Jambalaya (From Hillshire Farm)

2 TBSP butter1 medium onion1/3 c green pepper chopped1/3 c yellow pepper chopped1/3 c red pepper chopped2 cloves garlic, minced1 (1 lb package ) Smoked Sausage cut into 1/4 in slices2 cups chicken broth2 tomatoes chopped/diced1 c medium grain brown rice1 TBSP cajun seasoningAdd Tabasco Brand geen pepper sauce
Melt butter in heavy saucepan over high heat, add vegetables and sauté for 5 minutes.
Add all other ingredients, mix well and bring to a boil. Lower heat, cover and simmer for 25 minutes until rice is cooked.
Remove from heat and allow to sit for 5 minutes before fluffing with fork. Add hot sauce to taste.

HECOWE
This is a star of my weeknight rotation -- a one-pot meal, basically, that is full of flavor. I use Jennie-O turkey andouille sausage and either chicken thighs or a pre-cooked deli chicken, deboned. I never used to have Cajun seasoning, so I used chili powder instead. This is DELICIOUS!
