3 Eggs, Large5T Butter, softened1C White Sugar3T all purpose Flour 1 cup lowfat Buttermilk1 tsp Vanilla Extract 1T Lemon Juice 1/2 tsp Cinnamon, ground 1 crust, single 9" Pie crust, ready-to-bake
1. Preheat oven to 350 degrees
2. Sift flour and sugar together and set aside.
3. Beat eggs until frothy, add butter, sugar and flour. Beat until smooth.
4. Stir in buttermilk, vanilla, lemon juice and cinnamon, pour into pie shell.
5. Bake 40 to 60 minutes or until center is firm.
