Baked "Fried" Chicken

Ingredients
2 boneless, skinless breasts1 bottle I Can't Believe It's Not Butter Spray2 cups Kellog's Corn Flakes Cereal1 tsp salt1 tsp pepperOther spices, optional. * I have used garlic, basil, red pepper flakes, cumin, and rosemary...all with good results!
Directions
Preheat oven to 350 F.

Use rolling pin or plastic bag to crush corn flakes to fine crumbles, and mix in salt, pepper & any other spices.

Spread corn flake mixture onto a flat surface.

Slice chicken breasts in half to your preference.

Spray each half with butter spray, lightly coating each side evenly.

Roll chicken breasts into the corn flake mixture, coating them evenly.

Place in a shallow baking pan or flat cookie sheet, and bake until internal temperature reaches at least 165 F, or about 40 minutes.

Serves 4.

    this was great!! a good way to make the chicken crispy on the underside is to place the baking sheet on top of something; I place mine on top of a couple of souffle cups; the point is to allow heat to go underneath; the wire rack doesn't cut it. - 6/17/10

    I really like this dish. It was easy to make. Chicken was juicy and tender. So much flavor. Low calorie just add bake vegetables and you can have a dinner meal for under 200 calories. Make losing weight so much easier. - 9/26/08

    I just made this recipe and it was amazing. I used seasoned salt, pepper, onion and garlic powder. As yummy as it was it might not make great leftovers. We let ours sit for about ten minutes before eating and they were a little less crispy than they were fresh out of the oven. Overall, five stars! - 8/2/10

    I've made this a few times now and it's great! I add garlic powder, oregano, basil, Mrs. Dash, chili powder and a little paremesan cheese to it and it really gives it a fantastic flavor. I highly recommend this! - 4/3/08

    tried this tonight...brilliant, would crush the cornflakes in a blender rather than by hand, were very crispy! used olive oil spray instead. kids and family enjoyed would make this again as so easy and tasty - 9/14/11

    This is excellent. I used lemon pepper, a touch of salt, some pepper, and Strawberries bar-b-que seasoning. I put the seasoning in with the cereal and shook each piece to cover completely, will probably put on wire rack to get bottom crispy. - 1/6/10
