1.5kg lamb oil2 onions – chopped4 cloves garlic – chopped1TBS ginger – grated1TBS curry powder1tsp salt2 TBS lemon juice or white/cider vinegar3 tomatoes chopped / 1 tin2 fresh chillis/ little chilli paste2 TBS mintGaram Masala =¼ tsp corriander¼ tsp cumin½ tsp mixed spice
Fry onion, garlic and ginger until soft and golden. Add the spices, curry powder, salt and vinegar. Chop meat into chunks & add, stirring constantly until the lamb is covered with spice mixure. Add tomatoes, chilli and mint. Cover and cook over low heat for 1 ¼ hours or until the lamb is tender.
