Ingredients
3.5 serving red gold tomatoes diced with chipotle 2.5 serving Rotella tomatoes lime juice and cilantro 6 cup Chicken Broth (Sweet Sue) (by TSBYAMBER) 3 1tsp Canola Oil 12 oz meijer ground chorizo 1 large Onions, raw 2 serving Clove of Garlic (by BCOH1478) 1 tsp Cumin (ground) (by IVORYGRL1) 1 tsp Pepper, red or cayenne 2 large (2-1/4 per lb, approx 3- Sweet peppers (bell)
Directions
Cook chorizo, save fat as much as possible
Remove chorizo set aside
Add onion, garlic, cumin, red pepper, chopped sweet peppers until they have stsrted to soften. Add broth and tomatoes with juice. Bring to simmer and cook uncovered for 15 min
Add chorizo and cook additional 10 min

Can add lime juice, cilantro, tortilla strip and avocado to garnish
