Salmon Patties

Ingredients
1 can Red Salmon, 13 oz (drain and reserve juice) 12 Saltine Crackers, crushed1 fl oz fresh Lemon Juice 2 tbsp Hellman's Real Mayonnaise 2 tbsp Onions, finely diced2 tbsp Sweet peppers (bell), finely diced 1/3 c Panko bread crumbs 1 tbsp Olive Oil
Directions
Saute onion and peppers until softened. Drain salmon into medium bowl, reserving liquid, and remove and discard larger bones and skin. Add crackers, lemon juice, peppers and onion, and mayo. Stir gently to combine. Add salt and pepper, to taste, and enough of the reserved salmon liquid to moisten. Form into eight patties, coat each side lightly with panko. Fry in non-stick pan with a little olive oil until crispy and well-browned on both sides.
