Baked Oatmeal Muffins

2 large Egg, fresh, whole, raw 1 cup, packed Brown Sugar 0.75 cup Applesauce Tree Top No Sugar Added 1.5 cup Milk, 2%, with added nonfat milk solids, without added vit A 2 tsp Vanilla Extract .5 tsp Salt 1 tbsp Cinnamon, ground 3 cup Quaker Oats Old-Fashioned Rolled Oats 2 tsp Baking Soda
Whisk together the eggs and brown sugar.
Add applesauce, milk, vanilla, salt, and cinnamon.
Whisk until well mixed.
Stir in oats and baking soda.
Allow oat mixture to sit for 30 minutes.
Spray muffin cups and fill with 1/4 cup oat mixture each.
Top with blueberries, pumpkin seeds, flax seeds, chocolate chips, toasted nuts, dried fruit, etc., pushing down into the oat mixture with your finger.
Spray muffin tin with non-stick spray
Use 1/4 cup batter for each muffin
Top with blueberries, pumpkin seeds, flax seeds, chocolate chips, toasted nuts, dried fruit, etc.
Bake for 30 minutes at 350-degrees
Makes 18 muffins
