1 Tbsp Smart Balance Margarine Light1 6 inch corn tortilla1 large egg4 large egg whites
Melt margarine in a small frying pan. Tear up tortilla into smallish pieces (say 3/4 inch or smaller pieces) and saute in pan until the pieces start to become firm (but not hard, really to your taste). Add eggs and scramble.
Some people like to add hot sauce (salsa picante) or salsa or even add bacon or pieces of leftover meat. Just make sure you consider the calories for anything you add.
