Ingredients
2-3 Nopales1-2 Large Tomatoes1 large white onion1/2 bunch of cilantro2 tbsp salt. Quantity can be adjusted to your preferance of taste.
Directions
Remove thorns from Nopales and slice the Nopales length wise then across for cubes. Do the same with the tomatoes and onion. I add half a bunch of cilantro but use your preference for taste. You can cut up the cilantro or put it in as is.

Boil Nopales, tomatoes, cilantro and onion until the nopales are tender. (30-40 mins) *Low Boil*

This is more of a topping than a dish to eat alone. You can put them on wheat tostadas or add to scrambled eggs. This is a dish that will last almost the whole week if made for one.
