Greek Chicken

Ingredients
1 pound boneless chicken 1/2 cup crumbled feta cheese (3 grams of carbs)1/2 tsp dried oregano (0.5 grams of carbs) 1 tbsp lemon juice (1.3 grams of carbs)1 tbsp oilsalt and pepper to taste1 cup chicken broth1/2 cup tomato diced (5.8 grams of carbs)1 cup fresh spinach (2.4 grams of carbs)
Directions
Flatten chicken. Combine feta, lemon juice and oregano. Spread over chicken. Fold chicken to enclose filling; secure with a toothpick. Heat oil in a skillet until hot. Add chicken and cook until golden brown. Mix chicken broth, tomato and spinach. Add to skillet, heat to boiling. Reduce heat to low; cover and simmer 8-10 minutes. Serve.

    very good. I omitted the broth and added more tomatoes and baked them alongside the chicken. A bit more work than I'm used to, but it was worth it. - 11/13/07

    We tried this meal tonight. Very tasty. However, we will use less broth next time. It was a bit too soupy. Maybe add a bit more tomato. Good flavor. A definate "DO AGAIN" in our house! Thanks! - 6/3/07

    I prefer grilling or baking all my meats. So with this recipe I baked the chicken with the filling, brushed with some EVOO and sprinkled some bread crumbs on top, then tripled the spinach part of the recipe and ate it as a side. Delicious! - 3/25/07
