Low Carb, no bake blueberry cheesecake

7 gram(s) Knox Unflavored Gelatin, 1 envelope (by JACKIE.DUNNING) 1 cup (8 fl oz) Water, tap 16 oz Cream Cheese 1 serving Sweet Leaf Stevia sweet drops, berry 3 tsp Granulated Sugar .5 cup Blueberries, fresh
In small saucepan, sprinkle Knox over 1/4 c. cold water; let stand 1 minute. Stir over low heat until gelatine is completely dissolved.
In large bowl or food processor beat cream cheese, sugar, stevia drops until blended. Add blueberries, scraping down sides of bowl. Gradually beat in gelatine mixture, blue berries and up to 3/4 c. of water until smooth. Pour into 8-9" pie plate and chill until firm.
Garnish with fresh berries and whipped cream (optional. Not included in nutrition info).
