Wild Barley Bean Risotto

Ingredients
12 oz mixed mushrooms, sliced2 shallots, chopped1/2c pearl barly1/2c wild rice1/2c chick peas1/2c red kidney beans
Directions
Boil in pot 2 cups water. Add barley and wild rice. Let simmer for 30 minutes. In a saucepan sautey onions and mushrooms with margarine for 15 to 20 minutes or until soft. Mix barley and rice mixture to mushrooms and add beans.

    Really good. I found that the wild rice takes longer to cook, so next time I will give it a head start instead of adding the wild rice and barley to the water at the same time. I added thyme and salt to the finished product. yum! - 8/7/11
