Farfalle with Lentils and Artichoke Hearts

1 cup uncooked lentils3 cups of waterbay leaf1 tsp olive oil2 cups onion2 cloves garlic 1 tsp cumin1 tsp coriander2 tbsp lemon juice2 cups canned tomato1 9 oz. frozen artichoke or a 15 oz. canned artichoke1 pound pasta (farfalle, rotini or spiralli).25 tsp crushed red pepper flakesalt and pepper to taste1/4 cup feta cheese
boil lentils in 3 cups of water with bay leaf for 20 minutes.
Cook pasta.
saute onion until translucent in the olive oil. Add garlic, cumin and coriander. Cook for another 2 minutes. Add tomato, artichoke, lemon juice, and pepper flake. Cook for about 10 minutes. Add lentils and cook for another 10 minutes.
Drain the pasta and transfer to the serving bowl. Top it with the lentils and artichoke heart sauce. Season with salt and pepper. Sprinkle with feta cheese and serve.

This recipe was yummy overall, but some of the amounts seemed to be way off - the nutrition calculation is not correct, I think, since 1 serving of pasta (1/8 of a pound) is about 200 calories by itself. As the recipe is written there is too much pasta for the sauce. The flavors are GREAT though! - 4/6/09
