Spicy Black Beans and Brown Rice

1 large onion, chopped fine2 cloves garlic1 chipotle pepper in adobo sauce plus 1Tbsp adobo sauce1 Tbsp olive oil2 Tbsp tomato paste15 oz can black beans1/2 cup brown rice
Prepare brown rice according to package directions. Generally 1/2 cup of rice in 1 1/8 cup boiling water. Reduce heat after adding the rice to the boiling water, cover with lid and let simmer for about 20 minutes or until the water has been absorbed by the rice.
Meanwhile, in a large skillet heat the olive oil. Add the onions ans saute until translucent. Then add the garlic, chipotle pepper, adobo sauce, black beans and tomato paste. Heat through. Mix with cooked rice.
so easy and so yummy! If you want you could always add some vegan cheddar cheese or real cheddar cheese if you're a veggie :)
