Crockpot Sweet Potato & Black Bean Quinoa Chili

3 cup, cubes Sweet potato 1 cup, chopped Onions, red1 cup, Bell Peppers (chopped)3 clove Garlic (minced)1 can Black Beans (15oz)1 can Fire Roasted Tomatoes (28 oz) 4 cup Vegetable Broth 0.5 cup Quinoa (dry - uncooked)2 tablespoons tomato paste1 - 1½ tablespoons chili powder2 teaspoons cumin2 teaspoons paprika1 teaspoon coriander½ teaspoon cayenne (more or less to taste)Salt & pepper to taste
1. Add all ingredients into a crock pot (starting with just 3 cups of broth). Turn on high and cook for 4 hours, turn down to low and continue to cook until ready to serve. If too thick, stir in another ½ - 1 cup of water.
