3/4 c white sugar2 T unsifted flour1/4 tsp salt4 c fresh rhubarb, cut in 1-inch pieces Topping1 c rolled oats1/2 c firmly packed brown sugar1/2 tsp cinnamon1/2 c butter, melted
Mix sugar, flour and salt. Add rhubarb and toss lightly to mix. Turn in ungreased 8x8-inch pan. Mix oats, sugar, cinnamon and butter. Sprinkle over rhubarb. Bake at 350 until rhubarb is tender and topping is brown, about 35-45 minutes. Serve with ice cream or whipped cream. Serves 16.
