Fusilli with Creamy Ham and Peas Sauce

cooking spray1 cup ham, diced1 tsp olive oil1 onion, chopped2 garlic cloves, chopped2 tbsp flour1-1.5 cups of milk ( I use skim milk)1/4 cup (2oz) Low Fat Cream Cheese2.5 cups frozen peas, thawed1.25 cups Parmesan, grated and divided1/3 cup fresh Basil, choppedsalt and pepper5 cups cooked fusilli
Heat a non-stick pan coated with cooking spray. Cook the ham until it is somewhat crispy. Place the ham in a bowl and set aside. Heat the oil and saute the onions and garlic, unitl the onions are tender about 5 min. Add the onion mixture to the ham. Place the flour in the pan and let it cook for just a minute. Slowly add the milk to the pan and stir while doing so. Cook until the milk thickens. Add the cream cheese. Stir until it all melts. It may help to speed up melting if the cream cheese is cut into cubes before added to the pan. Stir in the peas, 1 cup of parmesan, basil, salt and pepper. Add the sauce and ham mixture to the pasta and toss well. Sprinkle the top with remaining parmesan

HATEBAND
This was very good. It wasn't the simplest recipe to put together, but it was worht it. THe only thing i had difficulty with was that milk is not listed in to ingredients but it is necessary in the sauce. I used about 1 cup. Next time i might make a little more sauce as it was a tad dry. - 3/5/08
