Banana Oatmeal Cookies

3 medium (7" to 7-7/8" long) ripe Bananas1/3 cup Canola Oil1 Large Egg5 cups dry Oatmeal 1/2 cup, chopped Walnuts1 Tbsp Vanilla Extract1 cup All Purpose Flour3/4 tsp Salt1/2 cup Sugar
Mix all dry ingredients in one bowl. In seperate (large) bowl mash bananas and mix all wet ingredients. Add dry to wet and stir until a thick drop cookie consistency.
*I use my KitchenAid and mix wet ingredients first then slowly add in the dry.
Bake at 350° for 10-15 minutes.
Note the amount of oatmeal can vary depending on whether you prefer flat oatmeal cookies or fluffy ones. This recipe is for fluffy. If you prefer a more traditional flat cookie decrease oatmeal by 2 cups. Calories content and servings will not be the same if you decrease oatmeal.
