Turkey/Vegetable Rice Bowl

Ingredients
1 pound of ground turkey breast1 large sweet onion, chopped2 C zuchinni, cut in chunks1 sweet pepper, chopped2 cloves of garlic1 brocolli bunch chopped2 T fresh basil, chopped1/2 t pepper 1 t salt1 t olive oil2 cups of brown rice, prepared
Directions
Follow the directions on the box for brown rice and prepare for 2 cups.

In a skillet or wok, put the olive oil and turkey. Brown the turkey over medium heat. Add the vegetables and spices. Simmer until the vegetables are soft and the onion is translucent.

Put 2/3 cup of brown rice in a bowl. Add 1/3 of the turkey mixture for 1 serving. Makes 3 servings. It can be topped with low sodium soy sauce and/or low fat cheese.
