1 cup Whole Wheat Flour 1 cup (1 serving) Kellogg's All-Bran Cereal 1 cup Milk, nonfat (skim milk) 1 medium (7" to 7-7/8" long) Banana, fresh 1 tsp Baking Soda .5 tsp Salt .5 cup, packed Raisins .25 cup Pumpkin, canned, without salt 1 tbsp Canola Oil 4 tbsp Honey 1 large Egg, fresh, whole, raw
Combine flour, bran, baking soda and salt in bowl. Add 2 T lemon juice to milk and allow to sour a few minutes. Combine banana, honey, pumpkin, oil egg and milk in blender and mix. pour into dry and stir to combine. Add raisins and stir to combine.
Pour into 5 greased mini loaf pans and bake at 375 degrees for 20-25 minutes or until testing done
Serving Size: makes 5 mini loaves, 12 slices each serving size-1 slice
