meduin onion diced1/4 cup diced carrots1/4 cup bell pepper diced1 clove of garlic diced1/4 cup grits uncooked (can use oats)1 tablesppon Flaxseeds1/2 cup mushrooms 2 Zuccinni
Heat oven to 30 degress. Wash zuccinni, cut in half leght wise, with spoooon, spoon out inside of zuccinni and dice up the insides set the shells aside. In a skillet with about 1 tablesppon oliv4e oil saute, sidce up zuccinni, onions, carrots, pepper and garlic, when soft add mushrroms and grets, flaxseeds saute about three more minutes. then spoon mixture into zuccinni shells place in shallow baking pan, pour about 1/4 to 1/2 cup water in bottom of pan . put in oven and bake 40 to 50 minutes.
