Delicious Low Fat Cowboy Stew

Ingredients
20 oz. pkg. ground turkey breast, 2 c. diced cooked potatoes,1 c. turkey or chicken stock,1 qt. tomato juice,1 lb bag frozen corn,1 c. raw onion, chopped,1 c. raw celery, chopped,1 can pinto beans (un-drained)
Directions
Saute' onions and celery in a bit of butter or olive oil until crisp-tender. Add turkey, crumbled, and cook until brown. Add to soup pot and add remaining ingredients. Cook together over medium-high heat for at least 15 minutes. Salt or season to taste. Serve with cornbread and a salad.
