Banana Buckwheat Pancakes

1 cup self- rising buckwheat pancake flour 1 cup Milk, Silk, Coconut, Vanilla 1 tbsp Coconut Oil 0.25 cup Egg White--All Whites 100% liquid egg whites 2 medium (7" to 7-7/8" long) Banana, fresh .5 tsp Cinnamon, ground .25 tsp Nutmeg, ground 1 serving Sweetleaf Liquid Stevia Drops (Vanilla Cream) 5 drops per serving. 1 tsp Vanilla Extract
Melt coconut oil in microwave about 30 seconds
Mash bananas in a small bowl
Add all ingredients to a medium mixing bowl. Mix with a whisk until all ingredients are incorporated. Batter will be lumpy.
Heat a pan or griddle. Spray lightly with non-stick spray. Pour batter by 1/4 cup on pan or griddle. (You may need to use the back of a spoon to spread the batter out a little to make them round.) Flip when edges are bubbly. Enjoy!
